This fresh, no-bake strawberry cheesecake with fresh strawberries and a cookie crust is easy and quick to make. Tip: make it in a heart shape, especially for Mother’s Day!

Ingredients

800 grams quark
75 grams granulated sugar
10 grams agar agar
300 grams strawberries
300 grams whole wheat biscuits
125 grams butter

Preparation

Line a 24-centimeter springform pan with parchment paper. Cover the sides with plastic wrap so the strawberries stick to the sides.

Cooking Instructions

  • Melt the butter in a pan. Crumble the biscuits and mix them with the melted butter.
  • Pour the cookie mixture onto the bottom of the springform pan and press it down firmly using the back of a spoon. Place it in the fridge for about ten minutes.
  • Clean the strawberries. Halve about 12 strawberries and press them, cut side down, against the edge of the springform pan.
  • Puree the remaining strawberries and heat them in a pan with the sugar, agar agar, and quark.
  • Bring to a boil and stir well. Let it simmer for another 2 minutes.
  • Combine the strawberry mixture with the quark and pour it over the cookie crust.
  • Let the cheesecake set in the fridge for at least three hours. Optionally, decorate with extra fresh strawberries before serving.
