Mini Raspberry Tiramisu

A summer twist on the classic Italian dessert: this refreshing tiramisu is made not only with raspberries and lemon but also served in cute little glasses.

Ingredients

400 grams raspberries
50 grams sugar
60 milliliters water
1 teaspoon lemon juice
250 grams mascarpone
150 milliliters whipping cream
1 teaspoon vanilla extract
Zest of 1 lemon
250 grams lemon curd
24 ladyfingers
Fresh mint

Cooking Instructions

  • Heat 250 grams of raspberries, the sugar, lemon juice, and water in a small pan and gently bring to a boil.
  • Once the raspberries are soft and the sugar has dissolved, let the mixture cool and blend it with a hand blender into a sauce.
  • Whip the cream with three tablespoons of sugar until light and fluffy.
  • Add the mascarpone, vanilla extract, and lemon zest, and mix until smooth.
  • Take four glasses and cover the bottom with halved ladyfingers.
  • Spoon 1-2 tablespoons of raspberry sauce over the ladyfingers.
  • Add a generous tablespoon of the mascarpone mixture, followed by 1-2 tablespoons of lemon curd and a layer of raspberries.
  • Add another layer of halved ladyfingers and repeat the previous steps until the glass is full.
  • Finish with the mascarpone mixture, fresh raspberries, and garnish with fresh mint if desired.
